We’ve come up with a different take on the traditional “Dirt Cup” and made it an allergy-friendly recipe.
Last spring, Enjoy Life Foods gave us the ingredients for making their dirt cup. It was very good! My wife thought she might have had a slight reaction to it though. Since Enjoy Life Products are top 8 free (so safe for her tree-nut allergy), she wondered if she had a possible Oral Allergy Syndrome to avocados. I was brainstorming for a while about what I could substitute the avocado with.
With summer still going, I wanted a fun treat that would remind me of vacationing at the beach. Since we live by the Rocky Mountains, we don’t have any beaches, just a few reservoirs.
I put on my Super thinking cap and remembered the dirt cup from the spring. I needed to sub out the avocado, so I thought bananas would do the trick for the pudding base. We didn’t have any rice milk which the original recipe called for, but we had some So Delicious Coconut milk. With these flavors mixed together the Tropical Sand Cup was born!

Top 8 free! Contains corn. Peanut free, tree nut free (except coconut, which isn't actually a nut), egg free, dairy free, soy free, wheat/gluten free, fish free, shellfish free, seed free.
Ingredients
Tropical Vanilla Pudding:
- 2 ripe bananas
- ¼ cup coconut milk (We used So Delicious Vanilla Coconut Milk)
- 2 T corn syrup, agave nectar, or other light-colored sweetener
- 1 t vanilla
- ½ cup Enjoy Life Foods Muffin Mix
Cookie “Sand”:
- 14 Enjoy Life Foods Sugar Crisp Crunchy Cookies (1 package), crushed
- 6 oz or about 2/3 of a container of dairy-free whipped topping (We used So Delicious Coco whip)
Instructions
- Blend vanilla pudding ingredients together.
- Layer the pudding, crushed cookies, and diary-free whipped topping to make the “sand” layers.
- Add your favorite toppings.
- Enjoy your day at the “beach!”
