This salad adds some extra flavor and zing to your typical dinner. The cilantro and lime really tickle your taste buds!
After a few restaurant meals that involved cilantro, I decided I needed more cilantro in my life. So I bought a bunch, which was actually quite cheap, and then had to decide what to use it on. After a few Google searches and experiments, this salad was born!
Cilantro Lime Cucumber Salad
Notes
Top 8 free plus! Free from peanuts, tree nuts, egg, dairy, soy, wheat/gluten, fish, shellfish, corn, and seeds.
Ingredients
- 2 cucumbers
- 3 Tbsp chopped fresh cilantro (or more, to taste)
- 1 garlic clove, minced
- 2 Tbsp olive oil
- 3 Tbsp lime juice
- 1/2 tsp salt
Instructions
- Chop the cucumbers as thinly as you can. Chop or mince the cilantro. Mix the two together in a medium bowl.
- In a smaller bowl, combine the olive oil, lime juice, minced garlic, and salt.
- Pour mixture over cucumbers. Allow flavors to marry for at least ten minutes, or up to a few hours. Serve immediately or chilled.
