This festive rice makes a great side dish to pair with any Mexican dish! Born of me just mixing my rice and vegetables together, this great rice is full of flavor!
Fiesta Rice
Notes
Contains corn. Top 8 plus free! Free of peanut, tree nut, egg, dairy, soy, wheat, fish, shellfish, and seeds.
Ingredients
- 2 cups cooked brown rice
- 1 cup cooked corn kernels
- juice of 1 lime (3-4 Tbsp, if not using fresh)
- 4 Tbsp pico de gallo salsa
- 2 tsp taco seasoning
- 2 Tbsp chopped fresh cilantro
Instructions
- Place all ingredients into a medium bowl.
- Stir together until seasoning is evenly distributed.
- Serve warm or chilled.
Be aware that taco seasonings can contain allergens–most notably soy, wheat, and/or dairy, so please choose wisely!
